Peanut Butter Dark Chocolate Chip Protein Balls

These are my absolute favorite go-to for a quick protein fix! Perfect for postpartum, they freeze easily to take out later. They are great for on-the-go. I love to have a couple with my afternoon latte! This makes a pretty big batch (my whole family loves them!) so feel free to cut the recipe in half.

WHAT YOU’LL NEED

  • Peanut Butter: you’ll want to make sure the ONLY ingredients are peanuts and/or salt. No oils or added sugars!

  • Honey or Maple Syrup: local is always best but do what you can! I interchange based on what I have at home.

  • Vanilla Protein Powder: I prefer plant-based, but you can use whatever you like.

  • Oat Flour: You can easily make your own oat flour by using a blender. I just give it a quick spin in my Ninja personal sized blender. If gluten-free, look for specifically gluten-free oats.

  • Dark Chocolate Chips: I prefer Enjoy Life.

  • Pure Vanilla

  • Optional Sea Salt


INGREDIENTS

  • 2 Cups Creamy Peanut Butter

  • 1/2 Cup Honey or Maple Syrup

  • 6 Scoops Vanilla Protein Powder

  • 1 Cup Oat Flour

  • 1/4-1/2 Cup Dark Chocolate Chips

  • 1 teaspoon Pure Vanilla

  • 1/2 teaspoon Sea Salt (Optional)

TO MAKE

  1. Combine peanut butter and honey and mix well.

  2. Mix in protein powder, oat flour, vanilla, and sea salt until mixture resembles a ball. If you need the peanut butter to stiffen up a bit, you can refrigerate for 10 minutes or so.

  3. Fold in chocolate chips until evenly mixed.

  4. Scoop the dough into balls - I prefer a heaping tablespoon size, but you can go as small or big as you want!

  5. Store in the refrigerator or freezer.

To freeze: line a small baking tray with parchment paper. Place balls in a single layer, being careful that they don’t touch each other. Flash freeze for about 2 hours. Place balls in a freezer-safe container.

NOTE: This is a great base recipe! Feel free to change protein powder flavors or add-ins. I’ve subbed unsweetened coconut flakes, chia seeds, etc! I’ve also left the chocolate chips out and instead drizzled melted chocolate on top.
